Then a few years ago we discovered that Catholics are still required to abstain from meat on Fridays year round, but when it is not Lent you can do an alternate penance. We made extra efforts to avoid meat on all Fridays from then on, trying a variety Homegrown Catholicshttp://www.blogger.com/profile/07096190611521081050noreply@blogger.com0tag:blogger.com,1999:blog-3361587348980748564.post-80482260195567662182024-02-07T17:43:00.001-06:002024-02-07T17:48:06.669-06:00Mud Pie Cookies
Flashback 2011: We are learning about spring, gardening, worms and all things dirty. Because I'm not inclined to play with real worms, as my kids are… I found this recipe amongst my "thing to make" pile of papers. There was no measurements and nothing online like it. So the kids and I did a test run! Not only was it fun and interesting to make - but they tasted delicious! Gluten free nuggets are expensive. They're also not keto/low carb. I was so relieved to find this solution to use pork rinds and make our own "breading." The children and teens actually like them and prefer them over store bought nuggets. This would be good on pork chops, and possibly fish as well.&Homegrown Catholicshttp://www.blogger.com/profile/07096190611521081050noreply@blogger.com0tag:blogger.com,1999:blog-3361587348980748564.post-10519249096781632012024-01-11T16:02:00.000-06:002024-01-11T16:02:11.382-06:00Savory Sausage This is my favorite low carb breakfast when I'm craving something savory. I gave it my own healthy twist and I hope you'll give it a try. It's a creamy, savory dish that doesn't take much time to throw together. With a large family, you figure out how to make food in large portions faster. Flipping a few pancakes at a time that feeds 1-2 people is too slow for this mom. So, I scoop the batter onto a silicone lined baking sheet like cookies. Toss on a few chicken sausages. Bake at 350° F for 12-15 mintues. Three trays in the oven feeds our family.

Most everyone has had Asian coleslaw at a family picnic or funeral. It's usually coated in sugar and ramen noodle (aka gluten & high carbs). No wonder I liked it so much as a child.
