Cranberry Relished Sweet Potatoes
Cranberry relish mixed into sweet potatoes makes a delicious cold or warm dish for a side, breakfast or treat! As discovered by me.
Food processor crush:
12oz fresh/froz cranberries
1 C pineapple chunks, drained (or 1 lg pear)
1 navel orange, with peel
1 C Brown Sugar
Peel, boil, drain then mash a 1/2 soup pot of sweet potatoes. (About 5-8 cups mashed)
Add 1/4 C Brown Sugar
Add 1 C Almond Milk
Add 1/4 C Orange Juice
Stir together, add cranberry relish.
Serve with whole cranberries on top. Serve chilled or warm.
Option to add crushed pecans, candied or toasted.
