Our Healthy Pantry

A lot of people ask have begun to ask me what we have in our kitchen for meals and snacks. Most of what we have is for feeding a family of eight, mostly gluten free, somewhat Paleo. What we have is mostly fresh or frozen. We try to avoid the highly processed foods that come in all those middle isles of boxes, cans and jars. But they occasionally make our way into our home. Notice the premade pumpkin pie in our fridge!

Food

Our fridge at home or on vacation generally includes:

Distilled Water, Naked Juice, Sparkling Water

Dressings, sauces, crushed garlic, maple syrup, jelly

Applesauce, dried apricots, fresh fruit (apples, bananas, grapes), Sweet/Green Peppers

Almond Milk, String Cheese, Block Cheese, eggs, yogurt, coconut butter, dairy butter

Pickles, fresh veggies (lettuce, onions, cucumbers, carrots)

Ground Turkey, deli meat, venison brats / turkey dogs, bacon pieces, other meats

My favorite thing to stock is sparkling water, lime LaCroix hits the spot as a carbonated drink. No sweetners of any kind, just bubbly water.

Our freezer [fridge and chest freezer] stays stocked with:

Frozen veggies (green beans, mixed veggies, zucchini, pumpkin, spinach)

Fruits (strawberries, blueberries)

Garden Burgers, Meatballs, Garden Lites muffins

Meat (ground turkey, chicken breasts, farm beef, venison)

Breads, incl gluten free loaves

Butter, ice cream, popsicles

Countertop and Dry Storage:

My kids are always asking for snacks, so I must always have apples and bananas on hand. This is also where I store my onions, sweet potatoes and squash on the countertops.

Other snacks are in locked cupboards. These are the basic gluten free chips and crackers, baby snacks, rice cakes, craisins, raisins, peanuts, pistachios, dried fruit, salsa and the like. However, the other cupboard holds our gluten or high carb snacks such as fruit snacks, potato chips, oatmeal, wheat pasta, croutons, popcorn, etc. As you can see, it's a rather empty spot.

Newer to having a real stash of canning goods (so much more next year), this is my mini section for canned tomatoes, pickles, venison, salsa, jams and relishes.

Top: Organic Coconut Sugar, Truvia for baking, Namaste Gluten Free Flour Blend, Trader Joe's Rolled Oats (Gluten Free), Brown Rice, Almond Flour, Coconut Flour

Middle: Sauerkraut, Peanut Butter, Marinara, Broth, Canned Tuna and Chicken,  Canned tomatoes and fruit, Canned Beans, Garlic, etc

Bottom: Noodles (Brown Rice and Corn), Wild Rice, Gluten Free Pizza Crust, Quinoa, Chia seeds, Flax (ground), nuts

Base cabinet: Cereals, pancake mix, applesauce, peanut butter, and other gluten free breakfast foods.

This was one of those Pinterest ideas I just had to follow through on!

 

Simply, cut strawberry point and leaves off.

Fill with piped whipping cream.

Top with strawberry point.

Add whipped cream on top.

Use food coloring gel for eyes.

 

Surround with mini marshmallows if you'd like!

Venison Stew

Now that I have a few jars of Canned Venison in my pantry, I wondered what deliciousness I could come up with. I made a typical stew with broth, carrots, onions, and celery and added in my canned venison. The only seasoning I added is Cabela's Wild Game seasoning.

Last year's table setting included pumpkins and gourds from my aunt and uncle's farm, and decorations the kids made from handpicked pinecones and festive masks.

Cranberry Relished Sweet Potatoes

Sweet Potato Cranberry Dish
Cranberry relish mixed into sweet potatoes makes a delicious cold or warm dish for a side, breakfast or treat! As discovered by me.

CRANBERRY RELISH
Food processor crush:
12oz fresh/froz cranberries
1 C pineapple chunks, drained (or 1 lg pear)
1 navel orange, with peel
1 C Brown Sugar

SWEET POTATOES
Peel, boil, drain then mash a 1/2 soup pot of sweet potatoes. (About 5-8 cups mashed)
Add 1/4 C Brown Sugar
Add 1 C Almond Milk
Add 1/4 C Orange Juice
Stir together, add cranberry relish.

Serve with whole cranberries on top. Serve chilled or warm.

Option to add crushed pecans, candied or toasted.

First Communion Chalice Gelatin

Found gold plastic "chalices" and added Strawberry-Banana Jell-O, fresh cut strawberries. Once gelled, I added a slice of banana for the "host." Of course no one could eat that nummy gelatin stuck in the bottom of the cup.

For those not inclined to take the cake, I had vanilla scented hand sanitizers and plastic cupcakes filled with jelly beans.

Meal Idea - Grilled Chicken with Steamed Veggies

Food

Before the warm weather is gone, get your chicken on the grill. Inside warm up a pan with some olive oil and red onions. Add broccoli and carrots, seasoning of choice. Cover and let steam cook for 20 minutes.

Pass on that corn for some warm cauliflower (I used fresh) with coconut butter and salt. I warmed mine up in the microwave and was completely satisfied with one bowl as I'd have with a large bowl of popcorn.

Brown cubed ham in a pan. Add warm over spring greens with a lite honey mustard dressing.

Strawberry Spinach Salad

Strawberry Chicken Salad

Spinach and Romaine are a great combo for this salad. Add sliced strawberries, slivered almonds, shredded carrots, sliced red onions, and grilled chicken to make a complete meal! Top it off with a healthy poppy seed dressing, and you'll never have to visit Applebees to have this treat again.

 

You can add a store bought Poppy Seed Dressing, or you can make your own!

Campfire Veggies

Want a healthy snack for your campfire or Confirmation party? Until I started making veggies look more like playfood, it was hard to convince my children to eat peppers! Now when they see this colorful bowl come out, they don't last long.

*Simply slice your red, yellow and orange sweet peppers into narrow triangles, and arrange as flames in a small bowl.

To continue the theme, pose white radishes as marshmallows!

Salmon Patties

My mom made salmon patties as a special treat now and then while I was growing up. I remember always, always wanting another. So it was inevitable that I'd be frying them up for my kiddos. This is a healthier take on those fish burgers for Paleo People and health nuts alike. Just think of all the great Omegas you'll get!

RECIPE

Combine salmon meat (canned), eggs (1 per can), white or *green* onions, minced garlic, salt and pepper, and a squeeze of mustard in a small mixing bowl. Add small amounts of coconut flour at a time until thick enough to form a patty.  Makes about 3-4 per can of salmon

Eggs can be omitted or replaced, but it really helps hold the patty together.


Fry in coconut oil until crisp on both sides and steaming. Serve hot.

Great with a side of asparagus and quinoa!

Turkey Wraps with Fruit Flowers

There is nothing like in season, juicy fruit and crisp vegetables to make it easier to throw together a quick, but delicious meal. This is a simple lunch idea myself and the kids have enjoyed over and over again.

Simply wrap up your favorite turkey and shredded cheese with an Italian vinaigrette in a large leaf of romaine. Brighten up your platter with fresh fruits with complimenting colors. Here I chose kiwi, clementine oranges, and black berries. As you can see, you can get kids to eat anything - even healthy foods - when it's all about the presentation!
