Tuna Melts

When Lent and Fridays approach, instead of grabbing a fast food,  greasy fish burger, make a tuna melt in minutes! You can make this ahead to be ready for a quick lunch at home or work. It's the most flavorful made warm, but it also tastes good chilled.

I like to decorate the house for all liturgical seasons,  including Lent. This is our dining table center piece in 2022.

 


Mix in a bowl (makes 8 servings):

3-4 Cans Tuna

1 c shredded cheese (we use VioLife Vegan/Dairy Free )

1/4 c diced onions (red look nice, green are mild)

1/2 c Mayonnaise

Salt & Pepper to taste (or seasoned salt)

Optional add in: diced celery, sweet peppers, pickles


Method 1. Heat a heaping scoop of tuna mix in microwave. Toast your favorite bread. Spread the tuna mix on toast and serve warm. 

Method 2. Serve warm or cold in a tortilla or lettuce wrap.

Method 3. Serve warm as a dip with crackers. 

Method 4. Assemble sandwich, butter top and bottom of bread,  then fry in a skillet until crisp and melting.  Timing depends on how thick you make it.

Serve with pickles, grapes or carrots.



Tip: Add a carrot in the middle for a "butterfly shape." If I make it look like something special, the children are more likely to eat it.
