Chicken Teriyaki Bowl

 We don't have a standard cuisine in our home. Every week is a unique menu from any before. Much depends on what's good,  new, on sale,  or fresh at the store.  This week I found Amylu's  Teriyaki Pineapple Chicken Meatballs. mmm that sounds good to me. I miss going to the local China Dragon for takeout,  but this is a delicious substitute. 



Servings for 8 **

1 (pk of 30) Amylu Chicken Teriyaki Meatballs

1 Red Onion,  chopped

4 Sweet Peppers (green, red, yellow, orange)

2 cans Pineapple chunks,  drained and reserved

1 can Bean Sprouts,  drained

2 Pouches Riced Cauliflower,  heated

*Optional sauces


Add to a pot the meatballs, onions and peppers.  Sautee on medium heat until warmed. Stir often to avoid meat burning, or add a little reserved pineapple juice or water. 

Stream riced cauliflower in microwave pouch. Add cauliflower,  bean sprouts and pineapple to pot. Stir and heat up to desired temp. 

Serve as is, or offer teriyaki,  stir fry,  soy, or sweet and sour sauces to drizzle and stir in. 


**Without sauce is 15g net carbs per serving (1 bowl with 4 meatballs). 

**Can reduce to only 8g net carbs removing the pineapple and 1 pepper from the recipe.
