Spinach Artichoke Alfredo, dairy free

 


About The Recipe

A dairy free, keto alfredo that leaves you satisfied. Add any meat, such as sausage or chicken. Add Miracle Noodles (konjac), or Leave out the noodles and cool for a dip.

Ingredients

2 Tbsp Garlic,  crushed or chopped

12 pieces Artichoke in oil (Kirkland),  chopped

1 can Coconut Milk (Thai organic)

1 Cup Dairy Free Mozzarella, shredded (Violife)

2 C or more Spinach,  chopped

1/2 C Green Onion, chopped

salt

3 Tbsp butter or ghee, optional

Add ins:

Konjac Miracle Noodles

sausage or chicken, cooked


Cooking Process

Sautee the chopped garlic and artichoke in the oil from the artichokes. (also good in butter or ghee)

Add 1 can coconut milk, 1c dairy free cheese, and salt. Simmer.

Toss in chopped spinach and green onion. Cook until softened.

Serve now, or add the noodles and meat as desired. Be sure to add these to your count.
