Pork Rind Chicken Tenders

Chicken nuggets are a staple food for most families with young children.  Gluten free nuggets are expensive.  They're also not keto/low carb.  I was so relieved to find this solution to use pork rinds and make our own "breading."  The children and teens actually like them and prefer them over store bought nuggets. This would be good on pork chops, and possibly fish as well. 

My recipe will make around 30 Tenders,  equal to about 60-70 nuggets.  It fed the 8 of us. Simple enough to cut in half or have leftovers to warm in the oven another day. 

Setup a station.  Fun to make with children! 

Ingredients (About 30 Tenders)
4.5lb Chicken Tenderloins,  fresh
3 Eggs,  whisked
4 Cups Fried Pork Rinds, ground
4 Tbsp Ranch (or other) Seasoning

Directions
1. Cover 2 baking sheet pans w parchment paper. Preheat oven to 350°F.
2. Whisk 3 eggs in a bowl. 
3. Grind pork rinds until you have 4 Cups ground crumbs. Mix in seasonings. 
4. Using tongs, or fingers,  dip chicken tenderloins in egg. Then set in seasoned crumbs and cover both sides. Set on pans. 
5. Bake in oven at 350° for 15min. Serve warm.
