Chaffles or Cheese Bread

 


There's nothing like a breakfast sandwich when you want an easy, filling meal for your family.  My favorite Saturday morning tradition is waffles and sausage with a side of fruit. While trying to eat a low carb diet,  I've enjoyed making cheese waffles with almond flour, popularly named "chaffles." Here's the recipe I threw together today. 


Serving 12 Chaffles, or 6 sandwiches

Wisk together:

6 Eggs

12 Tbsp Almond Flour*

1 Tsp Baking Powder

1 Cup Shredded Cheese**,  we use dairy free Violife

Shake in Favorite Savory Seasoning & Salt

Chives or Minced Onion is a great addition

Spoon in a heaping 2 Tbsp batter into your preheated, mini waffle maker. Cook until slightly crisp. This is slightly past when the waffle maker light goes out. Crisp is better if you plan to reheat in the microwave. Regular is better for reheating in the toaster, but don't forget these have cheese that could drip.

Warm up your sausage patties in the microwave, or on the griddle or stove. Alternatively,  add deli meat and lettuce for a lunch sandwich. Put together as a warm sandwich! mmmm  

These could be frozen in sets and warmed up throughout the week. 

*I have tried this with gluten free flour,  and that works also.  It just won't be low carb,  but a very delicious alternative to bread. 

**Note: the use of most dairy free cheese adds more carbs to the serving. Choose your battles wisely.
